In a world where we are often overwhelmed by the problems we face everyday, it is so empowering to know that we can change the world with such a simple tool: a fork. EarthSave is a unique organization. We not only educate, but we also support people on their paths to a more plant-based diet. And that makes the planet and our bodies healthier, EVERY DAY!

Our work for the planet is so important. More than 1/3 of all fossil fuels produced in the United States are used to raise animals for food. Waste from factory farms has polluted roughly 27,000 miles of rivers. And what about our personal health? Eating a plant-based diet lowers cholesterol, and has been immensely successful in preventing or reversing heart disease, the top killer in this country. And according to the American Cancer Institute, you can reduce your risk of cancer by 60-70%, simply by eating a whole food, plant-based diet and not smoking.

I could go on and on with these powerful statistics that show why EarthSave's work is so vital. Let's look at some of the impressive things we have accomplished this year:

The Taste of Health festival continues to grow. Our biggest crowd ever came to learn about plant-based eating during the May 2007 event at Slugger Field! (Estimated at 4,000 - 5,000 people.)
Our membership numbers are the highest they have been in the past 5 years!
We continue to offer and expand our tried-and-true programs, including Healthy Beginnings classes, cooking classes, potlucks, and a wide array of community outreach events.
Our volunteer numbers have increased yet again by 45%.

For the past 3 years, EarthSave Louisville has been able to make the most of our relatively small budget of $60,000 total per year.

In 2008, our goals are to increase our membership numbers and retention rate, increase outreach effectiveness, and become financially stable. We have our strategic plan in place, now we need your generous financial support.
